Drink of the week: Iced eggnog

Get festive this silly season with an icy twist on traditional eggnog.
Ingredients: (serves 6)
3.5oz (100ml) each brandy, rum and sherry
¾ cup (185ml) thin cream
¾ cup (185ml) milk
½ cup (125ml) cold water
½ cup (110g) caster sugar
2 eggs
2 cinnamon quills
Ground or freshly grated nutmeg
Preparation:
Place sugar, cinnamon quills and water in a saucepan.
Stir over low heat until sugar dissolves.
Simmer for 1 minute.
Remove and cool.
Combine 3.5 oz (100ml) of the syrup in a blender with the eggs, cream, milk and alcohol.
Pour into
cocktail glasses over ice.
Dust nutmeg over each drink.
